My Version of Afghani Kaddo (Butternut Squash with Meat and Yogurt Sauce)

One of our favorite restaurants in Cambridge is Helmand particularly for their roasted pumpkin dish, kaddo.  I've been looking for a recipe to replicate that delicate balance of sweet pumpkin, savory meat and tomato sauce, and tangy yogurt sauce for years. I tried a recipe found online last year, but it came out way too sweet.  Knowing me, I probably didn't halve all the ingredients correctly since I doubt I had two sugar pumpkins, but it was also a pain to roast the pumpkin for 3 hours and baste it.  Have you ever basted roasted vegetables???  Anyway, even if I fixed the sugar issue, I wasn't up for that time commitment again.

Apparently there's a shortage of sugar pumpkins in New England this year because of Hurricane Irene, and our farmer warned us not to keep our squashes around too long because of this year's growing conditions.  With multiple butternut squashes sitting around my kitchen from our vegetable share, I decided to give a different kaddo recipe a try with butternut squash.

I'm happy to report that this recipe came out fabulously, and it was a lot easier and faster than the last recipe I tried.  Peeling went super fast with  my new carbon steel C-peeler, so now I don't look like I'm about to chop off my fingers when trying to break down winter squashes.  I didn't bother adding garlic or salt/pepper to the yogurt but instead just added it plain to the rest of the dish.

My Version of Afghani Kaddo (Roasted Butternut Squash with Meat and Yogurt Sauce)

One 2 to 2.5 pound sugar pumpkin or winter squash (such as butternut or acorn), peeled and cut into 2-inch chunks
4 tablespoons vegetable oil
1/4 cup sugar
1/2 teaspoon ground cinnamon

1 cup plain yogurt
2 cloves garlic, minced
2 medium onions, chopped
1 pound ground meat (I've made with beef or pork, but I think even ground chicken would work)
1 cup tomato sauce
1/2 cup water

  1. Preheat over to 350 degrees Fahrenheit.
  2. Heat 2 tablespoons oil in a large oven-proof skillet or dutch oven that will fit all the pumpkin/squash. Brown the pumpkin/squash pieces, turning frequently, until golden brown (about 5 minutes.)
  3. Mix sugar and cinnamon, and sprinkle over pumpkin/squash. Cover with foil or pan cover. Bake for 30 minutes, or until tender.
  4. While pumpkin/squash baking, make meat sauce: In a skillet, heat 2 tablespoons of oil and cook the onions until lightly browned. Add ground meat, garlic, and salt and pepper. Mix well and cook until meat is browned. Add tomato sauce and water, mix thoroughly and bring to a simmer, lower heat, and cook about 20 minutes until it cooks down to a thick sauce.
  5. To serve: plate portion of the cooked pumpkin/squash, top with meat sauce and dollop of yogurt. 
Yields: 4 servings

Roasted Kohlrabi and Butternut Squash

Happy holidays! I had a blast cooking with my sister for Christmas. We made lots of delicious food, and when I asked for the recipes, she said, "You're not going to blog about them, are you?" Well, if she doesn't want me to start using her recipes for this blog, she better start her own blog soon!

Anyway, yesterday I made this recipe because I was trying to figure out what to do with this one poor kohlrabi stem I had left over from our fall CSA. Yes, the kohlrabi sat in my refrigerator for two months, but it looked exactly the same as the day we got it. I adapted the following recipe for my one lone kohlrabi, but the proportion of kohlrabi to butternut squash is probably pretty flexible. Anyway, it was a nice change from the usual roasted butternut squash. Kohlrabi is in the cabbage family according to wikipedia, but the stem part tasted like a sweet turnip!

Roasted Kohlrabi and Butternut Squash

1 medium kohlrabi stem without leaves
2 tablespoons extra-virgin olive oil
2 teaspoons dried thyme
1/2 teaspoon kosher salt
1/2 teaspoon black pepper
2 lb butternut squash

Put oven rack just below middle position, then preheat oven to 450°F.

Trim and peel kohlrabi, then cut into 3/4-inch pieces. Toss kohlrabi with 1 tablespoon oil, 1 teaspoon thyme, 1/4 teaspoon salt, and 1/4 teaspoon pepper in a Pyrex lasagna pan. Roast for 15 minutes.

Meanwhile, peel butternut squash, then quarter lengthwise, seed, and cut into 3/4-inch pieces. Toss squash with remaining 1 tablespoon oil, 1 teaspoon thyme, 1/4 teaspoon salt, and 1/4 teaspoon pepper in same bowl.

Turn kohlrabi over and push to one side of pan. Add squash to other side of pan, stirring and turning squash over halfway through roasting, until vegetables are tender and lightly browned, about 30 minutes total (after squash is added).

Yield: 4 servings
Active time: 15 minutes
Total time: 1 hour

Thanksgiving Edition: Butternut Squash Soup with Red Pepper Puree

Thanksgiving is my favorite holiday because it's just about family, friends, and food without the pressure of gift giving! I am happy to make side dishes for Thanksgiving. The pressure of making a good turkey is just too much for me.

I've made this butternut squash soup before, but for Thanksgiving dinner, I decided to actually follow all the directions. I wasn't a fan of the orange flavor, so I left the orange peel out in my final version of the recipe. The red pepper puree was a great addition, though. From reading the comments on epicurious.com, I also decided to roast the squash a bit to add a little extra flavor.

Butternut Squash Soup with Red Pepper Puree

For soup:
2 tablespoons olive oil
2-1/4 cups chopped onions
4 garlic cloves, minced
1 2 1/2-pound butternut squash, peeled, seeded, cut into 1-inch pieces
5 1/2 cups (or more) vegetable broth
1-1/2 teaspoons dried thyme



For puree:
1 cup coarsely chopped drained roasted red peppers from jar
1 tablespoon extra-virgin olive oil
2 garlic cloves, chopped
1/4 teaspoon dried crushed red pepper

Roast squash in toaster oven for 20 minutes at 350 degrees Fahrenheit.

Heat oil in heavy large pot over medium-high heat. Add onions; sauté until tender, about 12 minutes. Add garlic and thyme; stir 1 minute. Add squash and 5 1/2 cups broth; bring to boil. Reduce heat; cover and simmer until squash is soft, about 40 minutes.

In the meantime, place ingredients for puree in food processor and puree until smooth. Season with salt and pepper. (Can be made 1 day ahead. Cover; chill. Bring to room temperature before using.)

When squash is done, cool slightly. Working in batches, puree soup in food processor or blender until smooth. Return soup to pot. Thin soup with more broth if desired. Simmer 3 minutes. Season with salt and pepper. (Can be made 1 day ahead. Cool slightly. Cover and chill. Rewarm before serving, thinning with more broth if desired.)

Ladle soup into bowls. Swirl 1 tablespoon Roasted Red Pepper Puree into soup in each bowl.
